There are generally eight wines to tatse - a selection of red and white with the occasional rosé or dessert wine sometimes being on offer. All of the wines are chosen from the wines of the month in the Gandolfi trio: Cafe, Bar and Fish. Then there is a vote on the the wines that everyone would like to be drinking the following month. Nibbles are also provided to accompany the food as well as some practice of, and advice on, food and wine matching.

All the wine is available to buy on the night or later that month.
